Eggs In Purgatory




This is one of the easiest recipes .... just heat a couple of tablespoons of oil, cook onions until translucent, add garlic. Can of whole tomatoes. Some Basil,salt,pepper & crushed red pepper(optional) to taste....after its simmered for about 30 minutes just drop eggs in and allow to poach for about 5 minutes. Serve with Italian bread and salad.
